This salad is Arugula, candied pecans in Ice Syrup, dehydrated cranberries, and Asian brown pear (can be substituted with Ontario Bartlet or Bosc when in season). Do pecans and set aside, in same pan add pealed slices of Asian brown pear, sauté for a few minutes and add the juice of half a lemon and the cranberries, keep sautéing until tender and add 2 tsps of Ice Syrup and cook for 1 minute.


Assemble arugula in a bowl, add the pecans and if wanted Blue cheese or aged white cheddar or fresh grated Parmesan Reggiano, pour pear and cranberry mixture over arugula, this is the dressing. Sprinkle or salt and fresh pepper, toss and serve.
